Job Description
RHEA Recruitment, a recruitment agency specializing in high-end hospitality and restaurant recruitment, is looking for a
talented Executive Chef for a prestigious 4★ Luxury Hotel (confidential location, France).
The establishment offers several gastronomic outlets, including a Michelin-starred restaurant.
The objective is to achieve 2 Michelin stars.
Profile sought
We are looking for an experienced Executive Chef who has already worked in Michelin-starred establishments.
Your role will be to work closely with the Director of Restaurants & Bars, the Head Sommelier, and other department managers to uphold and enhance the excellence of this exceptional property.
About the property
- 20 rooms and suites
- Fine dining restaurant with 60 seats (open 5/7) – 1 Michelin star
- High-end brasserie with 100 seats (open 7/7)
- A bar/lounge and a tasting cellar
Responsibilities
- Manage and supervise all kitchens (Michelin-starred restaurant, brasserie, bar/lounge) (a dedicated chef oversees the brasserie)
- Ensure the quality of culinary offerings while respecting the establishment’s standards
- Lead a team of approximately 25 people, fostering a positive and motivating working environment (recruitment to be planned)
- Design menus in collaboration with the teams, promoting creative and refined cuisine
- Oversee cost control, stock management, and purchasing optimization
- Support and train teams to achieve culinary excellence
Required skills
- Mandatory expertise in fine dining and Michelin-starred cuisine (experience in 2-star Michelin establishments is highly valued)
- Strong leadership and team management skills
- Excellent organizational skills and attention to detail
- Strong interpersonal skills and professional presentation
- Ability to work collaboratively with other departments
Conditions
- Salary: depending on profile

- Days off: two days per week
