HEAD CHEF (M/F) – Hotel (Rooftop and Japanese Gastronomic Restaurant) located in Nouvelle-Aquitaine
A prestigious 5* Luxury Lifestyle hotel is seeking a Head Chef for its signature restaurant, offering a fusion of Japanese cuisine blending tradition and international influences, set in an elegant and festive environment.
You will join a passionate team and play an active role in the success of this large-scale restaurant (+180 covers indoors and outdoors) in a unique, lifestyle-driven, and festive atmosphere.
Your Role:
As Head Chef, you will be responsible for ensuring an exceptional culinary experience, in line with the image of the establishment. You will report to the Executive Chef and the Deputy Director in charge of F&B.
Main Responsibilities:
- Prepare refined and innovative menus that highlight quality, local, and seasonal ingredients.
- Oversee and coordinate all kitchen operations, ensuring adherence to quality standards and hygiene regulations (HACCP).
- Manage supplies and optimize raw material costs.
- Lead, train, and motivate a large kitchen brigade to ensure a collaborative and efficient working environment.
- Contribute to the development of new culinary offerings for events and special needs.
- Create schedules based on activity and optimize team working hours.
- Ensure cleanliness and proper maintenance of the kitchen.
- Manage supplier relations in the absence of the Executive Chef.
- Implement and evolve the procedures in place at the establishment.
- Interact with guests at the end of service to ensure their satisfaction.
Profile Sought:
- Proven experience as Head Chef or Sous-Chef in a gastronomic or high-end establishment.
- Passion for fusion Japanese cuisine, with a sharp sense of creativity and innovation.
- Strong leadership, discipline, and excellent organizational skills.
- In-depth knowledge of HACCP standards.
- Proficiency in English is essential.

- Annual gross salary: €45,000
