RHEA Recrutement, a recruitment agency specializing in hospitality and food service, is hiring on behalf of one of its clients:

JUNIOR HEAD CHEF (M/F)

📍 4-Star Hotel – Bourgogne Franche-Comté Region

🏨 About the Establishment

  • A fully rebuilt 4-star hotel with 58 rooms, operational for the past 18 months.
  • The owners are seeking a Junior Head Chef to manage the bistronomic restaurant.

🎯 Role & Responsibilities

  • The future chef will primarily be hands-on in the kitchen, but the owners are looking for someone proactive and creative, who can suggest new ideas and develop signature dishes.
  • High attention to plating and seasoning is essential.
  • The main goal is to free up time for the Executive Chef, who now oversees the broader hotel operations (breakfast, buffet, brasserie), while enhancing the culinary offering of the restaurant.

The current chef has been promoted to Executive Chef.

🍽️ Restaurant Details

  • 60-seat bistronomic restaurant, open 7 days a week for lunch and dinner
  • Average ticket: €40
  • Culinary style: Refined yet accessible Parisian bistronomy, inspired by venues like Leonor in Strasbourg and L’Imperator in Nîmes

🌿 Outdoor Spaces

  • Central courtyard terrace: 13 tables
  • Restaurant terrace: 8 tables
  • Bar terrace: 8 tables
  • 2 private reception rooms (up to 30 guests depending on format)
  • Rooftop (80m²): Designed for private or professional events and themed evenings.
    • Format: standing buffet, no seated tables
    • Equipped with an outdoor kitchen

🍳 Additional Culinary Areas

  • Breakfast buffet served in a dedicated room, under the chef’s scope
  • Main kitchen adjacent to the restaurant, with direct access to a large basement:
    • Includes prep area, cold rooms, wine cellar, dry storage…

👥 Team Composition

  • 9 kitchen staff members

🔍 Candidate Profile

  • Passionate and creative junior chef
  • Preference for cuisine that appeals to a wide audience
  • Experience in neo-fooding and 4-star hotel environments is a plus

💼 Contract & Conditions

  • Start date: As soon as possible
  • Salary: €3000–€3500 gross/month, depending on profile
  • Accommodation: Provided at the hotel for the first few days
