Job Description

RHEA, a recruitment agency specialized in Hospitality and Food & Beverage professions, is seeking a:

Head Chef (M/F)
Location: Normandy Coast, France

This 3-star hotel with a traditional restaurant was taken over in December 2024 and is currently undergoing redevelopment.
The project aims to rebuild a strong culinary identity centered around authentic French bourgeois cuisine, rooted in high-quality Normandy local produce.

The future Head Chef will play a central role in this transition by restructuring the kitchen, leading and mentoring the team, and actively contributing to the revival of the establishment.
The restaurant is in a relaunch phase, with a loyal clientele gradually returning and a clear ambition: to restore consistency, generosity, and coherence in the gastronomic offering.

The activity is currently ramping up ahead of the high season (May to September).

150 m² kitchen – excellent working environment!


Main Responsibilities

  • Create menus and à-la-carte dishes inspired by traditional, seasonal French bourgeois cuisine.

  • Ensure full alignment between the culinary vision and the identity of the establishment.

  • Select and promote local producers and artisans (farmers, fishermen, breeders, etc.).

  • Lead, train, and structure a young and developing kitchen brigade.

  • Oversee daily organization, production, orders, inventory management, and food cost control.

  • Participate in defining margin and performance objectives with the management.

  • Represent the kitchen and the values of the house to clients and partners.

Establishments such as Le Café des Ministères, La Fontaine de Mars, Le Relai Barbizon, or Henriette (Cabourg) exemplify the culinary philosophy sought: traditional, sincere, and well-crafted bourgeois cuisine.


Profile Sought

  • Experienced cook, or sous-chef ready to take on a first Head Chef position.

  • Strong knowledge of French gastronomy and quality produce.

  • Ability to structure and lead a team in a relaunch context.

  • Excellent organizational skills, rigor, high standards, and reliability.

  • Appreciation for well-executed, honest cuisine; patience and medium-term commitment.

  • First-time Head Chefs accepted if highly motivated and committed to a long-term development project.


Position Details

  • Split shifts.

  • Staff accommodation (60 m²) provided during the trial period.

  • Company utility vehicle available for professional use.

  • Performance bonuses (food-cost and revenue).

  • Value-sharing bonus and prorated 13th-month salary.

  • Salary: €2,600 to €3,000 net/month depending on profile, plus bonuses.

  • Contract: Permanent (CDI) – split shifts.

  • Start date: December 2025 / January 2026.

This position requires long-term commitment and a genuine desire to support the establishment’s growth.
