Job Description

RHEA Recruitment, a specialized agency in Hospitality and Restaurant recruitment, is currently searching for a Head Chef for a gourmet restaurant in Paris.

Job Description:

  • Position: Head Chef (M/F)
  • Location: Paris

Details: The future chef will enjoy complete freedom in choosing their culinary direction while respecting the restaurant’s identity. The management team is committed to supporting the chef in achieving desired culinary distinctions (Gault&Millau, Michelin).

The working environment is exceptional, with an open kitchen, top-notch equipment, though compact. The restaurant is open from Monday to Saturday and includes:

  • 24 seating places
  • TM 35 for lunch, 70 for dinner / Acceptable ratio of 25-30
  • In addition to the à la carte menu (3 starters – 3 main courses – 3 desserts), a tasting menu is required.

Team:

  • 1 Sous Chef
  • 1 Chef de Partie
  • 1 Commis
  • 1 Dishwasher

Kitchen Management:

  • Design creative and seasonal menus.
  • Supervise the preparation, cooking, and presentation of dishes in accordance with the restaurant’s quantity standards.
  • Ensure all dishes are prepared consistently and according to recipes and technical sheets.
  • Guarantee compliance with hygiene and food safety standards in the kitchen.

Team Management:

  • Recruit, train, supervise, and motivate kitchen staff, including chefs, kitchen assistants, and dishwashers.
  • Schedule work hours and manage daily tasks of the team.
  • Provide ongoing training to enhance staff skills.

Costs and Inventory Management:

  • Control food product costs by monitoring purchases and minimizing losses.
  • Manage inventory and ensure proper rotation of products.
  • Collaborate with the restaurant manager to optimize profitability.

Conditions:

  • Start Date: End of January, beginning of February as per candidate’s preference.
  • Contract Type: Permanent
  • Working Hours: 43 hours from Tuesday to Saturday – split shifts
  • Gross Monthly Salary: €3,700 to €4,200 (depending on profile)
  • Bonuses and Benefits: Monthly bonuses for cost management
  • Status: Executive

Annual Closure:

  • 3 weeks in August
  • 1 week in December
