Job Description
RHEA Recruitment, a high-end hospitality and restaurant recruitment agency, is looking for a HEAD CHEF (M/F) in Paris.
Neo-bistronomic concept, innovative, gourmet, and exclusively seasonal.
Carte Blanche: creativity, fooding… Short menu (quality guarantee).
The establishment is committed to ecology and sustainable development.
Average ticket: €45 / 24 seats.
Average covers: 20 per service at the beginning of the week & 40 per service at the end of the week.

The complete kitchen team consists of 1 Head Chef – 2 Line Cooks – 2 Dishwashers. The simultaneous team is composed of 2 Cooks + 1 Dishwasher.
Usual hours in normal operation: arrival at 9:30 AM, kitchen closes at 2 PM, and in the evening, the kitchen accepts orders until 10 PM on weekdays and 10:30 PM on weekends (but reservations after 9:30 PM are very rare).
Exclusively fresh and seasonal products.
The chef has carte blanche on the menu, but with 3 references out of the 12 proposed that remain unchanged (the menu includes 4 starters / 4 main courses + 1 shared dish / 4 desserts). The menu evolves with the seasons but never changes completely at once; we change the references one by one or two by two.
Energy management, recycling of packaging, and other materials, as well as the complete use of products to generate as little waste as possible, are priorities within the establishment.
