HEAD CHEF (M/F) – PARIS
We are looking for a passionate Head Chef for a restaurant specializing in Mediterranean cuisine. This establishment is part of a dynamic group that already has four locations in Paris, as well as in Ramatuelle, Val d’Isère, and Roquebrune-Cap-Martin.
The establishment is open 7 days a week and offers continuous service:
- In summer: approximately 600 to 700 covers per day, with a terrace.
- In winter: approximately 350 to 400 covers per day.
The menu changes four times a year, and it is essential to demonstrate creativity, as your creations will be subject to corporate approval (the menu is developed in partnership).
Responsibilities:
- Manage and monitor the Food Cost.
- Be responsible for the scheduling of the kitchen and dishwashing teams (30 people, including 6 dishwashers).
- Place orders with suppliers.
- Actively participate in recruitment, retention, and management of the kitchen payroll.
- Know, apply, and ensure compliance with hygiene and safety standards.
- Supervise and ensure service.
- Create and update technical sheets.
- Control the quality of goods and production.

Conditions:
- Desired start date: December or January
- Type of employment: Permanent contract (CDI)
- Status: Executive
- Compensation: Starting from €4500 to €5000 net per month, plus bonuses (a percentage of monthly revenue). The kitchen team can expect an average of €1200 net in additional bonuses in summer and €800 in winter.
