CHEF DE CUISINE (H/F) – PARIS

We are looking for a passionate Chef de Cuisine for a prestigious gastronomic institution located in Paris. This restaurant is part of a dynamic group that owns several high-end addresses in Paris, including a Michelin-starred restaurant.

The establishment:

  • Cuisine type: Gastronomic, not Michelin-starred but of high quality, with a focus on excellence.
  • Service capacity: Around 200 covers per service, including regular events and banquets (up to 1200 covers per week, 180-150 covers at peak dinner periods, 110-40 covers during quieter lunch periods).
  • Team: 2 chefs de cuisine, 2 junior sous-chefs, 1 to 2 commis, 20 kitchen staff.
  • TM: 200 euros
  • Working hours: The restaurant is open 6 days a week, closed only on Sundays.
  • Kitchen: Large and spacious, fully equipped (a rare feature in Paris).

Your role:

  • Manage and motivate a team of 15-20 people in the kitchen.
  • Work closely with the other chef in a team-based approach to ensure quality and service flow.
  • Oversee the management of orders, costs, and the quality of the dishes served.
  • Ensure the smooth setup and execution of special events and banquets.
  • Follow financial objectives and ensure cost control.

Profile sought:

  • Significant experience as a Chef de Cuisine in a dynamic environment.
  • Passion for gastronomic cuisine and commitment to maintaining high standards.
  • Ability to manage a team, work under pressure, and make quick decisions.
  • Strong motivation to join a prestigious group with development potential.
  • Possibility of advancement to Executive Chef position soon.

Salary and benefits:

  • Salary: 4000 € net + tips between 200 and 250 € per month.
  • Bonus: Based on financial results and achieved objectives (if cost ratios are met).
  • Financial objectives: Related to raw material costs and profitability.
  • Start date: ASAP.
