HEAD CHEF (M/F) – Fine Dining Japanese Restaurant in France (Not in Paris)
A prestigious 5-star Luxury Lifestyle hotel is seeking a Head Chef for its signature restaurant, offering Japanese fusion cuisine, blending traditional flavors with international influences in an elegant and festive setting.
Join a passionate team and play a key role in the success of this high-volume restaurant (180+ indoor and outdoor covers) in a unique, lively, and upscale environment.
Your Role:
As Head Chef, you will be responsible for ensuring an exceptional culinary experience in line with the hotel’s image. You will report directly to the Executive Chef and the Deputy Director of Food & Beverage.
Main Responsibilities:
- Execute refined and innovative menus, highlighting high-quality, seasonal, and local products.
- Supervise and coordinate all kitchen operations, ensuring compliance with quality standards and HACCP hygiene regulations.
- Manage supplies and optimize food costs.
- Lead, train, and motivate a large brigade to foster a collaborative and high-performance work environment.
- Contribute to the development of new culinary offerings for special events and occasions.
- Create efficient work schedules based on business needs and optimize the team’s time management.
- Maintain kitchen cleanliness and organization at all times.
- Handle supplier relations in the absence of the Executive Chef.
- Enforce and enhance the hotel’s existing operational procedures and standards.
- Engage with guests after service to ensure customer satisfaction.
Profile Sought:
- Proven experience as a Head Chef or Sous-Chef in a fine dining or high-end establishment.
- Passion for Japanese fusion cuisine, with a strong sense of creativity and innovation.
- Strong leadership, organization, and attention to detail.
- Excellent knowledge of HACCP hygiene standards.
- Fluent English is required.
