Job Description
RHEA Recrutement, a specialized recruitment firm in the hospitality and restaurant industry, is seeking an Executive Chef (M/F) to join a group of brasserie-style restaurants based in the PACA region and Miami.
Role Overview
You will be responsible for the kitchens of two restaurants and supervise the head chefs across all establishments. Initially, you will assume the responsibilities of Chef de Cuisine in the morning at the establishment based in the south of France.
Profile:
- Trendy restaurant, world cuisine
- Average ticket: €50
- Open 7 days a week, 800 to 1200 covers/day
Responsibilities:
- Ensure the quality of products
- Optimize kitchen services for smoother operations
- Recruit kitchen staff (40 in France and the same in the USA)
- Conduct regular audits in the restaurants
- Proactively anticipate and resolve issues
- Manage ratios, costs, losses, inventories, orders, and stocks
- Support the group’s development and future openings
- This is an operational, hands-on, and autonomous role.
Profile Sought
Education:
- Degree in hospitality and restaurant management
Experience:
- Proven and positive experience as a Chef or Executive Chef
- Used to managing high-volume establishments (800 to 1200 covers/day)
- Knowledge of world cuisine
Skills:
- Excellent management and leadership skills (psychology, delicacy, consideration, authority)
- Ability to lead a team, anticipate conflicts, and train staff
- Appreciated for dynamism and good humor
- Mastery of ratios and development of technical sheets
- Fluent in English
Conditions:
- Chef de Cuisine only in France: €5000 net/month + accommodation, morning shifts only, and two days off
- Executive Chef for France and Miami: Salary to be defined (around €7000/month) + accommodation
- Position available immediately.
