Job Description

RHEA Recruitment is a specialized agency in high-end hospitality and restaurant professions, seeking a Pastry Chef for an exceptional establishment offering a unique gastronomic experience in France.

About the establishment: With its 49 rooms, including several luxurious suites, this establishment is an ideal location for a memorable getaway, blending history and refinement. It offers a diverse culinary experience from sweet to savory, with strong influences from Provençal and Burgundy cuisines. You will have the opportunity to work in an environment where the culinary DNA is distinguished by its creativity.

The establishment includes:

  • A Michelin-starred restaurant (evening service only):
    • Capacity: 10 tables
    • Hours: Evening service only, from Wednesday to Sunday, and Sunday lunch
    • Average Ticket: €210
    • Desserts: Two desserts on the menu, plus mignardises and pre-dessert
    • Menu: Influenced by Provençal and Burgundy cuisines with strong creativity
  • A casual bistro (open 7 days a week for lunch and dinner):
    • Capacity: Approximately 30 to 50 covers per service
    • Hours: Lunch and dinner service, 7 days a week
    • Average Ticket: €60 for lunch, €70 for dinner
    • Philosophy: The bistro allows for significant creative freedom in the kitchen
  • A poolside restaurant (snacking menu) open during the day in summer
  • Room service available 7 days a week
  • A tea time to be developed on Saturday and Sunday afternoons

The establishment is closed in January.

Your role: As a Pastry Chef, you will be responsible for:

  • Collaborating with the Executive Chef in creating dessert menus.
  • Managing the supplies needed for the smooth operation of the pastry section.
  • Proposing new VIP services.
  • Supervising a team of 5 pastry staff.
  • Preparing and overseeing the production of base preparations, as well as the assembly and presentation of desserts.
  • Controlling the quality of products and the delivery of perishable goods.
  • Effectively directing your team’s tasks to ensure customer satisfaction.
  • Contributing to the creation of schedules based on workload.
  • Having an in-depth knowledge of the menus and technical sheets of the different restaurants.
  • Ensuring excellent collaboration with other departments.

Desired Profile:

  • An outstanding Pastry Chef with solid experience in a Michelin-starred establishment; however, a junior chef profile is also considered.
  • Creative and passionate about pastry innovation.
  • Eager to work in a prestigious establishment and grow within a dynamic team.

Conditions:

  • Salary: €4000 gross per month, managerial, for 39 hours/week, 12 months.
  • Contract: Permanent (CDI).
  • Accommodation: Not provided.
  • Start Date: ASAP, ideally by October 1st.
  • January Closure: (unpaid leave).
  • Equipment: Laboratory equipped with new steam oven, mixer, and laminator.
