Job Description

RHEA, a recruitment agency specializing in the Hospitality and Catering industry, is seeking a Restaurant Manager / Sommelier (M/F) for a neo-gastronomic restaurant ideally located in a lively district of Paris.

About the position:

  • Restaurant: Open 7 days a week
  • Product sourcing: Short supply chains
  • Average ticket: Lunch 85 euros, dinner 95 euros
  • Average covers: 50 covers per service
  • Team: One manager + 2 head waiters

Your missions:

  • Create an exceptional wine list: Design an attractive wine list, optimize existing allocations, and discover new wines.
  • Increase lunchtime revenue: Collaborate with the chef to propose an attractive menu and maximize lunchtime revenue.
  • Collaborate with the head chef: Follow the established guidelines, assist the chef in decisions regarding the quality/quantity/price ratio of dishes.
  • Optimize services: Find solutions to increase service slots and adjust staffing levels to maximize revenue.
  • Work closely with the Director of Operations and the Administrative and Financial Manager: Monitor weekly progress and results to adjust strategies in real time.
  • Develop communication and event channels: Attract new customers and increase revenue, especially in the upstairs dining room.
  • Maintain and develop relationships with neighborhood hotels: Strengthen existing partnerships and create new ones.
  • Expand the customer base: Retain our current clientele while attracting new customers.
  • Enhance the restaurant’s reputation: Target prestigious guides such as Gault & Millau and the Michelin Guide.

Your role involves:

  • Providing a unique experience to every customer,
  • Advising and retaining each customer,
  • Having an overall managerial vision,
  • Distributing smiles, no matter the day or weather,
  • Contributing to the revenue growth.

  • Strong knowledge of oenology,

  • Salary: 3000-3500 euros net
  • Hours: Executive status, complete freedom in scheduling as long as the restaurant operates smoothly
  • Days off: 2 consecutive days (Sunday and Monday) with potential for Saturday and Sunday in the future
  • Start date: Immediately or at the start of September
