Job Description
RHEA, a recruitment agency specializing in the fields of Hospitality and Catering, is currently hiring:
PASTRY CHEF (M/F) – Bordeaux-Southwest Region
We are seeking a Pastry Chef for a hotel with 8 rooms and 4 suites, along with a restaurant ideally located in the Southwest region. The establishment holds a Michelin star, offers seating for 35 guests, and is closed on Saturdays, Sundays, and Monday morning.
The owning group has an excellent reputation and the owners are epicureans with a preference for locally-sourced ingredients. The establishment benefits from its own market garden, a mushroom farm on-site, as well as a vineyard.
Responsibilities:
Develop the pastry section in collaboration with the Executive Chef in the kitchen.
Ensure the service setup.
Prepare basic recipes (creams, various doughs, sauces, coulis…).
Create classic desserts, as well as more elaborate pastries and entremets.
Strictly adhere to hygiene and food safety regulations.
Provide training for the team (2 commis) and manage schedules.
Monitor the quality of dishes.
Enforce and abide by hygiene rules and HACCP protocols, as well as internal regulations.
Adhere to safety standards and act as a liaison.
Comply with the establishment’s standards.
Adapt creative pastry offerings according to changes in clientele and ensure continuity in terms of quality and presentation.
Profile:
Effective in assisting those around you in making progress.
A preference for high-level pastry.
Ability to innovate and combine flavors.
Desire for long-term commitment.
Additional Information:
Position Availability:
Salary depending on profile: 3500 – 3800 gross / month depending on profile
Housing provided for initial shared accommodation
Permanent contract
7 weeks of paid leave per year, including two weeks of recovery from December 15 to January 15, one week at Easter, and two weeks at the end of August.
