SOUS CHEF DE CUISINE (H/F) Asia
THE COMPANY: A French restaurant in Asia aiming for a 1* Michelin level.
The restaurant’s current ambition is to achieve 1 Michelin star.
In direct collaboration with the Executive Chef/Owner, you will work closely with their partner and the junior sous chef, both of whom are French.
The restaurant has 18 seating places, open from Thursday to Monday, with an open kitchen layout, and is equipped with excellent facilities!
Offering 4 or 6-course menus (TM from 120 euros to 240 euros).
Team: two chefs, two sous chefs, chef de partie, and commis (total of 6 kitchen staff plus two dishwashers).
Responsibilities:
- Supervise the smooth running of the prep
- Ensure compliance with HACCP standards
- Place orders with the head chef
- Participate in the smooth running of the service with the teams
- Assist in sourcing local products for menu development
- Support during the prep / service
- Minimize waste
- Instill the spirit of the establishment in the local cooks
- Capable of managing a team in English
This position requires a successful previous experience in high-end establishments (luxury hotels/gastronomic restaurants – Michelin-starred establishments) in France, and ideally, some experience abroad.
This position is for confirmed professionals, French nationals only, committed and ambitious individuals willing to commit long-term.
Working Conditions: Package including airfare + visa fees + health insurance 2 days off on Tuesday and Wednesday Closure for 3 weeks in August
Salary if junior 35,000 HK$ -> 4,100 euros net / month or 40,000 HK$ -> 4,700 euros net / month Budget of 13,000 HK$ for accommodation -> accommodated in a hotel for the first two/three weeks
Permanent contract Schedule: split shifts (average of 10-12 hours/day) Work visa 1 one-way economy class plane ticket Preferably single Starting date: as soon as possible
