RHEA Recruitment, an international hospitality and restaurant recruitment agency, is looking for one of its clients:
SOUS CHEF CUISINE (M/F)
Based in the USA, this family-run group of artisanal bakeries and patisseries, which we have proudly supported for 8 years, is renowned for the excellence of its products. Combining French expertise with boundless creativity, their creations are crafted using fresh, organic, local, and seasonal ingredients. It’s an ideal environment for passionate food lovers who want to be part of a culinary journey inspired by French tradition while exploring new flavors.
Under the supervision of the French Super Head Chef and the brand’s Founder, the role involves developing the savory section and catering menu. The Sous Chef will manage the production for four stores, focusing on simple menus (salads, Croque Monsieur, quiches) with the goal of enhancing both flavor and presentation, drawing inspiration from Ladurée’s savory menu.

- Ensure a refined, enjoyable, and delicious dining experience while maintaining good profitability.
Under the Responsibility of the Head Chef:
- Team: Collaborate to inspire, mentor, motivate, and train the team, ensuring their success while carrying the brand’s vision.
- Creativity: Participate in managing the culinary experience by bringing innovative ideas and a keen interest in world cultures.
- Purchasing: Help manage stock efficiently, control costs, and maintain the quality of ingredients.
- Hygiene: Contribute to the organization of the kitchen and the team to ensure strict compliance with HACCP hygiene standards, safety, and production.
- Customer: Prioritize a customer-focused approach by delivering exceptional service while respecting the expected timing and experience.
Candidate Profile:
- 3 to 5 years of experience as a confirmed Chef de Partie, ideally with one year of experience as a Sous Chef in gastronomic restaurants, 5-star hotels, or luxury caterers in France.
- Strong communication and interpersonal relationship management skills.
- Languages: Fluent in French and English.
- Entrepreneurial mindset: Ability to take initiative, solve problems, continuously improve, and adapt to situations.
- Leadership: Experience managing a multicultural team.
- Culinary creativity: Passion for diverse cuisines, with mastery of both traditional and modern techniques.
