HEAD CHEF (M/F) – Paris
A creative, innovative, gourmet, and exclusively seasonal neo-bistro concept.
Carte blanche for creativity and fooding approach – short menu (a guarantee of quality).
The establishment is committed to ecology and sustainable development.
Concept Overview
- Average spend: €45
- 24 seats
- Average covers: 20 per service at the beginning of the week & 40 at the end of the week
Environment & Team
Open kitchen concept.
Full kitchen team:
- 1 Head Chef
- 2 Chef de Partie
- 2 Dishwashers
Operational team on shift:
- 2 cooks + 1 dishwasher
Working Hours
- Standard schedule: arrival at 9:30 AM, kitchen closes at 2:00 PM
- Evening service: kitchen open until 10:00 PM on weekdays and 10:30 PM on weekends (rarely reservations after 9:30 PM)
Concept & Culinary Direction
- Fresh, seasonal, and exclusively seasonal products
- Full creative freedom for the Head Chef
- However, 3 out of 12 menu items remain unchanged
- Menu structure:
- 4 starters
- 4 mains + 1 sharing dish
- 4 desserts
- The menu evolves with the seasons but is never completely changed at once; items are replaced gradually (one or two at a time)

- Recycling and packaging reduction
- Full product utilization and minimal waste

Conditions
- Net salary: €2,900 + food cost bonus
- 4 split shifts per week + Friday morning shift
- Rest days: Friday evening, Saturday, Sunday
- Annual closure: August 2nd to August 26th
- Contract: CDI or 6-month fixed-term contract possible
