Job Description
RHEA Recrutement, a recruitment agency specialized in the hospitality and restaurant industry, is looking on behalf of one of its clients for a:
Italian Head Chef (M/F) – Paris
An iconic restaurant with a strong ambition: to become the leading Italian dining destination in Paris.
A historic Parisian institution, once frequented by legendary figures such as Jean-Paul Belmondo and Alain Delon, is preparing to reopen after a full renovation. The restaurant will offer authentic Italian cuisine in a chic, intimate bistronomic setting.
The Establishment:

Around 50 covers
-
Open 6 days a week (closed on Mondays)

Compact kitchen with a deliberately short menu focused on freshness and quality

Average spend per guest: €60-70
-
Reopening planned around August 28

Renovations ongoing; kitchen equipment can be purchased based on the new Chef’s requests
Main Responsibilities:

Design and creation of the Italian menu
-
Managing a team of 4 kitchen staff
-
Overseeing orders, stock management, hygiene standards, and food cost ratios

Working closely with the owner, who also manages other venues

Ensuring a generous, precise, and product-respectful cuisine
Profile Sought:
-
Proven experience in traditional or modern Italian cuisine

Autonomous, organized, and able to lead a small team

Strong sense of organization and creativity
Conditions:

Full-time permanent contract (CDI)

Start date: as soon as possible, ideally from August 25

Salary: €3,800 – €4,000 net per month

Split shifts (lunch & dinner)
