Job Description
RHEA Recrutement is assisting a prestigious French gastronomic group in recruiting a Deputy General Manager based in Paris.
Context and position objectives
As part of an ambitious organizational restructuring and strategic business development plan, the group is seeking an experienced professional to support its General Management.
This highly visible role is a rare opportunity to work closely with a visionary leadership team in a dynamic, high-end gastronomic environment undergoing significant growth.
The group operates and supports a diverse portfolio of premium establishments, including:

One 2-Michelin-starred gastronomic restaurant in France, plus an additional 1-star and another 2-star restaurant.

One bistronomic restaurant and a hybrid venue dedicated to private events and digital content production.

One 3-Michelin-starred gastronomic restaurant within a luxury hotel in a major global city.
-
Two premium restaurants located in a palace within an imperial city.
Profile sought
-
Seasoned professional from the F&B sector (high-end restaurants, luxury hospitality, premium restaurant groups).

Significant experience in the operational management of large-scale restaurants or F&B units.

Excellent command of demanding service and quality standards.

Natural leadership and ability to manage multidisciplinary FOH/BOH teams and cross-functional roles on a daily basis.

Rigorous, highly detail-oriented, with strong analytical and financial management skills (P&L, KPIs).

Outstanding interpersonal skills, diplomacy, and impeccable presentation.
Key responsibilities
Reporting directly to General Management, the Deputy General Manager will oversee, coordinate, and support the group’s strategic operations and projects.
Main duties include:
Supervising operations at the flagship Parisian site

Managerial leadership and coordination of FOH and kitchen teams.

Participation in recruitment and HR management.

Budget planning and monthly reporting (P&L).
-
Monitoring financial and operational KPIs, implementing the commercial action plan.
Contributing to the strategic repositioning of another establishment
-
Commercial and operational analysis and diagnosis.
-
Defining and implementing economic development strategies in collaboration with corporate and operational teams.
Supporting development and innovation projects
-
Active participation in launching a new restaurant concept in Paris.

Supporting the development of digital projects and video content in line with partnership management and brand strategy.
Supporting commercial development in France
-
Working alongside the field teams and the Head of Sales France to optimize performance and strengthen the group’s image.
