Job Description

RHEA Recrutement, an international hotel and restaurant recruitment firm looking for one of its clients (M/F)
HEAD BAKER  (H/F) in Paris

Independent family group founded by a renowned pastry chef in France and internationally, growing group with several openings planned in Asia

This HEAD baker only has to focus on bread (very limited range compared to a traditional bakery), the salty offer to produce and the baking of pastries that arrive frozen from the central laboratory.

Production management from 2 to 3 shops
All the bakers are based in the lab because it is the only bakery currently and it feeds:
-1 bakery (bread/ salted offer/ baked pastries)
-1 shop where a small range of bread is sold but it is not a pure bakery (bread/ baking pastries)
-1 shop where a small range of bread is sold but it is not a pure bakery (bread/ salty offer/ baking pastries)

Management of Teams and management: must manage 5 people and with him it represents 6 people, it is enough to send all the production while knowing that the bakers do not make the pastry or the offer taste or pastry. (These ranges are made in the central laboratory by the team of touriers and pastry chefs so not under the responsibility of the chef baker.)

Management of orders for raw materials
Supply Management
Guarantee daily production, respect manufacturing processes and ensure product quality
Management of the team schedule
Follow established cooking recipes and procedures
Ensure the quality of finished products
Maintain a clean and organized work environment
Develop the range and be proactive

Profile:
The company is looking for someone reliable and creative.
Significant experience in laboratory production is desirable

Conditions:
Schedule: bakers start between 3 am and 8 am depending on whether they are from the morning team or the afternoon team.
Contract: fixed-rate framework
Salary: 3600-4000 € gross/month (depending on profile)
Annual premium that approaches the 13th month
Off: two consecutive days
