Job Description

RHEA Recruitment, Hospitality, and Catering Recruitment Agency is looking for a Chef de Cuisine (H/F) in the Provence-Alpes-Côte d’Azur (PACA) region.

The restaurant group currently operates two establishments in Paris, a beachfront restaurant in the south of France, and other establishments internationally.

The festive restaurant, open 7 days a week, is located on a beautiful beach.

Management of a team of 10/12 people (seconds, chefs, kitchen assistants and divers)
Average ticket: €250
Volume: 300/350 place settings per day

 

Job Description:
Management:
• Conduct quality recruitment corresponding to the needs and expectations of the establishment
• Adhere to established social and administrative procedures
• Enforce hygiene and safety rules
• Organize staff schedules
• Lead, animate, and motivate the team daily
• Listen to the staff while asserting authority
• Coordinate and supervise all activities of the kitchen brigade throughout the service duration

The menu is developed by the group’s executive chef, with real exchange with them.

Production:
• Establish the manufacturing process (technical sheet) and ensure compliance
• Create new dishes
• Anticipate changes in customer needs and tastes
• Ensure product quality
• Control dish production
• Calculate ratios
• Optimize needs and control raw material management
• Build and maintain commercial networks ensuring the best quality/price ratio
• Contribute through performance to customer loyalty and development

Profile:
• Knowledge of rules related to nutritional claims
• Knowledge of hygiene and safety rules
• Qualitative management
• Comfortable in a high-volume environment and accustomed to trendy and festive settings

Conditions:
Start Date: From early April 2024 to mid-October 2024
Contract: Seasonal fixed-term contract (CDD) / Managerial status
Hours: 08:30 – 18:00 / 42 hours per week
Net salary: €5000 + €1000 net bonuses = Package at €6000 net

Position housing  (30/35 minutes by car from the restaurant)
