HEAD CHEF (M/F) in Paris

Trendy restaurant with an Italian concept, ideally located, open every day for lunch and dinner, and continuous service during the weekends.
Average lunch attendance: 60 covers Average dinner attendance: 170 covers AVG transaction value: €50 HT
Kitchen team: 1 Head Chef / 1 Sous Chef / 1 Head Chef de Partie / 7 Chefs de Partie / 1 Pastry Chef / 1 Officer / 1 Apprentice and 3 Dishwashers
RESPONSIBILITIES
- Structure the service,
- Organize the schedule,
- Recruit kitchen staff,
- Manage the kitchen team,
- Train kitchen staff to ensure consistent production quality,
- Ensure compliance with current hygiene and safety standards,
- Establish and enforce production and cleaning processes,
- Supervise and ensure the proper functioning of kitchen technical resources,
- Master ordering, costs, and stocks,
- Develop technical sheets for all recipes,
- Collaborate effectively with the front of house.
PROFILE
- Knowledge of Italian cuisine is mandatory,
- Mastery of pasta, ravioli, and gnocchi making is mandatory.
- Minimum 5 years’ experience as a Head Chef, with at least 2 years’ significant experience as a chef in a high-volume establishment.
- Familiarity with and mastery of labor cost and solid ratio challenges.
- Skills and ease in managing the menu on a weekly basis (daily for lunch during weekdays).
- Enjoy teamwork and research (culinary, technical, strategic) to best meet the restaurant’s operational needs.
Conditions:
Contract type: Permanent (Day Package) Status: Manager
Compensation: €52,000 gross per year depending on profile + Performance Bonus (equivalent to a 13th-month salary)
