HEAD CHEF (M/F) for the OPENING of a 4-Star Hotel in the Burgundy Franche Comté region
The establishment will comprise 58 rooms, a fully reconstructed hotel that will open its doors before the summer.
For the restaurant section, the owners are seeking a passionate and creative Head Chef for the restaurant’s launch.
80-seat restaurant -> Bistronomic cuisine open for lunch and dinner 5/7
Average ticket around €30
Culinary DNA/Style: Parisian bistronomic cuisine exported to this establishment, offering refined yet accessible dishes. Inspired by the ambiance of Leonor in Strasbourg or L’Imperator in Nîmes.

Outdoor Terraces: One in the central courtyard: 13 tables Directly adjacent to the restaurant: 8 tables Directly adjacent to the bar: 8 tables 2 private reception rooms for about thirty people, depending on the format (seated banquet, …). Rooftop: 80m², we want to be able to privatize it for private or professional events, but also open it for themed evenings. Preferably a friendly format with a standing buffet. No seated tables planned. There will be an outdoor kitchen on this roof.
Breakfast: served in a dedicated room but within the chef’s scope -> Buffet for breakfast
Desire to study with the chef to optimize the spaces as there are many areas: The main kitchen adjacent to the restaurant has direct access to a large basement with an office, cold rooms, cellar, dry storage, … The breakfast room also has a small office that could be used for room service, but again, this remains to be defined.
Team Composition: Team to be built with the chef
Passionate and creative chef Open to media profiles like TOP CHEF but no Michelin-star aspirations Preference for a cuisine that appeals to the widest audience, experience in neo-fooding, 4-star hotel.
Conditions: Start Date: As soon as possible to contribute to the creation of concepts and the menu for the planned opening in June. Salary: To be defined based on the profile (€3000-€4000 net) Housing assistance considered during the trial period
