Job Description

RHEA Recruitment, a hospitality and restaurant recruitment agency, is looking for one of its clients for an


The group comprises 7 restaurants combining two brands in Paris, EU, and Asia.

You will initially have 3 restaurants, then quickly progress to 7.

Environment / DNA: fast casual dining and luxury boutiques.

Team: 3 to 4 people per restaurant (28 people) plus extras.


  • Menu creation: marketing briefing + 3 tastings and menu adaptation for franchised restaurants abroad (expect one trip to Asia / year and several visits / year to Berlin)
  • Creation of technical sheets: collaboration with the purchasing department to negotiate supplier prices
  • Processing documents on Microsoft Office
  • Creation of recipe cards (French / English)
  • Split shifts to be closer to the teams
  • Photo shooting: press / influencers
  • Training teams on-site: Organization of setups and monitoring of hygiene rules (DLC / process)
  • Training and adaptation of recipes with chefs abroad.
  • Follow-up of the menu launch
  • Audit of stock management with the chef and restaurant manager
  • Constant monitoring of the quality of supplier products
  • Regular control of recipes (technical sheets, taste, production quantity)
  • Development of bacteriological analysis processes with a laboratory
  • Awareness / management with all teams on love and respect for the profession
  • Human resources: Job interviews, schedules, management of pay instructions to the HR department
  • Participation in the preparation of restaurant plans and budgets (kitchen, dining room, storage) and monitoring of work (before, during, and after)
  • Attendance at operational meetings and Codir to debrief, adjust, and develop new projects


  • Permanent contract, continuous hours only in the morning from Monday to Friday
  • OFF on Saturday and Sunday
  • Salary: €4,000 -5,000 gross/month plus 10% variable
