Job Description

RHEA Recruitment, a high-end hospitality and restaurant recruitment agency, is currently seeking an Executive Head Chef for a Mediterranean restaurant, a modern Trattoria, located in a vibrant district of Paris. The restaurant operates 7 days a week, and everything is made in-house.

Details:

  • Position: Executive Head Chef (M/F)
  • Location: Paris

Environment:

  • Mediterranean-inspired Trattoria with a semi-open kitchen
  • 400 covers per day (50% dedicated to the pizza section managed by the pizzaiolo chef)
  • Stimulating and motivating managerial and career development policies
  • Top-notch working environment

Your Objectives:

  • Manage the operational aspects of the 20-person brigade in the main restaurant and about ten in the other
  • Ensure the smooth operation of both kitchens
  • Essential knowledge of Italian cuisine; fluency in English and Italian is desirable

Role Overview:

  • Develop menus and prepare technical sheets
  • Manage the existing team and recruit (significant brigade)
  • Ensure compliance with hygiene and safety standards
  • Handle orders with suppliers and manage stocks

Qualities for Success:

  • Successful and significant experience in a similar role or as a Head Chef
  • Ability to work with fresh products and manage large services
  • Proven managerial skills
  • Strong organizational and leadership skills

What the Company Offers:

  • Contract: Permanent (CDI) with Executive status
  • Starting date: ASAP (the current Executive Head Chef is leaving on February 12th)

  • Salary: €52,000 gross per year depending on profile + Performance Bonus (equivalent to a 13th-month salary).
