Pastry Chef (M/F) – France

As part of the opening of a fully renovated hotel, we are recruiting a Pastry Chef to join an ambitious and well-structured project.

The Property

• 4-star hotel with 102 rooms

• Restaurant with terrace

• Two restaurant dining rooms

• A bistronomic / traditional outlet with gastronomic ambition (non-Michelin starred)

• High-quality beach-return snacking concept

• Year-round operation (open all year)

The vision is clear: to deliver an elegant, seasonal, identity-driven cuisine with a true pastry signature.

Environment & Collaboration

A strong partnership is in place with a nearby bakery founded by a former Palace Pastry Chef. Breads and certain technical bases (tart shells, specific pastry bases) are produced and delivered externally, allowing the Pastry Chef to fully focus on creativity, execution, and dessert identity.

Organization

• Pastry brigade of 2 to 3 team members

• Key leadership position with autonomy and responsibility

• Close collaboration with the Executive Chef and management

Key Responsibilities

• Structure and lead the pastry department

• Develop and renew the dessert menu according to seasonality

• Oversee production for the restaurant, terrace, and snacking offer

• Organize schedules and supervise your team

• Manage ordering and cost control

• Ensure consistency, quality, and strict hygiene standards

Profile Required

• Experienced Pastry Chef or strong Sous Pastry Chef ready to step up

• Background in luxury hospitality or high-end dining

• Strong organizational skills and attention to detail

• Natural leadership and ability to manage a small team

• Controlled creativity with a strong product vision

Conditions & Benefits

• €3,500 gross per month

• Performance-based bonus (including 13th-month bonus)
