Job Description

RHEA, a recruitment agency specialized in the hospitality and restaurant industry, is looking for a:

Restaurant Manager / Sommelier (M/F)

For a neo-bistronomic restaurant ideally located in a lively neighborhood in Paris.

Restaurant: Open 7 days a week
Product sourcing: Short supply chains
Average ticket: Lunch €65, Dinner €80
Average covers: 50 covers per service
Team: One manager + two head waiters

Your responsibilities (Job description available on request):

  • Provide a unique experience for each guest.
  • Advise and build customer loyalty.
  • Have a comprehensive management vision.
  • Always distribute smiles, no matter the day or weather.
  • Contribute to the growth of the restaurant’s revenue.
  • Create an exceptional wine list and optimize wine allocations.
  • Develop lunch revenue by offering attractive menus.
  • Collaborate with the chef to ensure the quality and cost-effectiveness of dishes.
  • Maximize service efficiency and adjust the payroll accordingly.
  • Track weekly results with the Operations Manager and the Administrative and Financial Manager.
  • Develop communication and event-driven initiatives to attract new customers.
  • Strengthen relationships with local hotels and expand the customer base.
  • Target prestigious culinary guides to increase the restaurant’s reputation.

Profile:

We are looking for a passionate leader with proven experience in restaurant management and excellent interpersonal skills. You should be able to motivate teams and lead the restaurant to excellence.

  • Knowledge of oenology

Conditions:

  • Salary: €3000-3500 net
  • Hours: Executive status, complete flexibility in planning as long as the restaurant runs smoothly
  • Rest days: 2 consecutive days off (Sunday and Monday) with the possibility to evolve into weekends
  • Start date: ASAP
