RHEA Recrutement is seeking for an iconic oceanfront restaurant on the Atlantic coast, its future:

🎯 OPERATIONS MANAGER (M/F)


📍 The Context

Established in 1900, this historic house is located in a coastal town on the Atlantic and specializes in the retail sale of seafood: oysters, mussels, shellfish, and crustaceans.

In 2022, a restaurant was launched in a unique setting—right inside the seafood tanks—with an exceptional ocean view. The venue’s DNA? Ultimate freshness, a warm spirit, and authentic products.

Recently renovated, the restaurant offers a generous, honest, and product-driven cuisine rooted in freshness, terroir identity, and conviviality.

🎯 Your Missions

Reporting to the President, the Operations Manager is responsible for the overall day-to-day operational management of the establishment.

They work closely with the Administrative and Financial Manager to ensure performance, image, and the smooth operation of the site.

⚙️ Main Responsibilities

  • Oversee the entire business (restaurant + retail shop).

  • Manage the existing teams (service, sales, kitchen).

  • Responsible for recruitment and HR functions: scheduling, implementing procedures, regulatory compliance…

  • Ensure customer satisfaction and profitability.

  • Supervise supply management in collaboration with the Head Chef.

  • Guarantee compliance with hygiene and safety standards (health approvals, internal protocols).

  • Contribute strategically and commercially to the business’s development.

Skills & Profile

Expertise

  • Proven experience in the restaurant industry (mandatory)

  • Solid managerial background

  • Proficient in managing a profit center

  • Knowledge of HACCP standards

  • Familiarity with seafood products (a plus)

  • Computer literacy (Office Suite)

📆 Conditions

  • Salary: €45,000 to €50,000 gross/year depending on experience

  • Workdays: Wednesday to Sunday

  • Contract: Permanent (CDI)

  • Housing assistance possible

  • Start date: July or earlier
