Job Description

RHEA Recruitment, a recruitment agency specializing in the Hospitality and Restaurant sectors, is seeking to fill the position of:

Head Pastry Chef (M/F) for a concept fusion Asian restaurant in Paris. The team consists of 36 people, with 3 to 4 members dedicated solely to pastry. The establishment operates 7 days a week, lunch and dinner -> 500 covers/day.

Responsibilities:

The Head Pastry Chef is responsible for managing the pastry department within the establishment. They ensure operational excellence, creativity in the desserts offered, and adherence to hygiene and food safety standards. They coordinate pastry activities to deliver innovative and high-quality desserts that enhance the customers’ culinary experience.

Creation and Innovation:

  • The menu includes 8 desserts, with mochis that only require assembly and a fairly simple fruit salad.

Supervision and Organization:

  • Supervise and coordinate all pastry activities.

Management:

  • Optimize costs and control the budgets allocated to the pastry department.

Team Management:

  • Manage the pastry team by planning tasks and supervising daily operations.

Quality and Hygiene Standards:

  • Ensure strict adherence to hygiene and food safety standards, especially HACCP.

Skills / Attributes:

  • Creativity and passion for pastry.
  • Leadership and the ability to motivate a team.
  • Excellent organizational skills and attention to detail.
  • Mastery of pastry techniques and hygiene standards.
  • Ability to work under pressure and solve problems effectively.

Conditions:

  • Schedule: Continuous morning/evening shifts.
  • Days off: Saturday and Sunday or Sunday and Monday.
  • Start date: June 15th.
