Job Description
RHEA Recruitment, an international recruitment agency specializing in hospitality and restaurant industries, is searching for one of its clients:
Assistant Sous Chef (M/F)
The restaurant is a dining establishment with 45/50 seated places. It operates from Tuesday to Saturday, and it is recognized by gastronomic guides worldwide, aiming to continue evolving within these guides.
Responsibilities: Reporting to the executive chef, the assistant sous chef is a trustworthy individual responsible for assisting the Head Chef in all aspects: creation, recruitment, integration, training, and management.
The kitchen brigade is structured as follows:
- 1 executive chef
- 1 sous chef/assistant chef
- 1 chef de partie
- 4 chefs de partie (cold kitchen, fish, meat, desserts)
- 2 1⁄2 chefs de partie
- 2 commis chefs
- 2 apprentices
- 2 dishwashers
The pastry brigade, entirely independent of the kitchen, consists of a pastry chef, a second pastry chef, a chef de partie, 1⁄2 chef de partie, and a commis.
Responsibilities include:
- Ensuring the smooth operation of the kitchens
- Following specifications, participating in kitchen development
- Liaising with suppliers
- Controlling the quality of received products from suppliers
- Participating in and overseeing preparations
- Organizing services and the pass (the sous chef assists the head chef during lunch and dinner services)
- Controlling and monitoring orders
Implementation of new dishes and quality standards:
- Participating in tastings of new dishes
- Participating in the search for products
- Contributing to the development of technical sheets
- Training teams on new dishes
Team management:
- Welcoming new recruits
- Training all teams
- Evaluating brigade members
- Developing brigade members
- Ensuring team stability
Financial management involvement:
- Participating in creating team attendance schedules
- Controlling orders
- Contributing to the creation of technical sheets for transmission to the cost controller
- Responsible for end-of-month inventories
Hygiene and sanitation:
- Ensuring the kitchens are well-maintained
- Ensuring the hygiene of brigade members
- Ensuring compliance with HACCP standards
The assistant sous chef must be capable of independently leading the kitchen in the absence of the head chef.
Profile: Strong organizational skills and a team-oriented approach are essential qualities. Regardless of formal education, the candidate’s personality and the establishments they have worked in will make a difference. A successful experience of at least 3 years in a similar role in the high-end restaurant industry and excellent interpersonal skills are required. Being energetic, precise, and autonomous are crucial assets for successfully fulfilling the assigned mission.
Conditions:
- Salary: €3500 gross *12 months
- Days off: Sunday and Monday
- Schedule: mixed shifts (split and continuous)
- Start date: ASAP or the second week of January
