Job Description

RHEA Recruitment, an international hospitality and restaurant recruitment agency, is seeking for one of its clients:

SOUS CHEF (M/F) – Asia

THE COMPANY: A French restaurant in Asia, currently holding 1 Michelin star, is looking for a Sous Chef.

In direct connection with the Executive Chef/owner, you will work closely with the Junior Sous Chef, both of whom are French.

The restaurant has 18 seats, is open from Thursday to Monday, features an open kitchen, and is well-equipped.

The menu offers 4 or 6 courses (Average Spend: €120 to €240).

Team:

  • Two Chefs
  • Two Sous Chefs
  • Chef de Partie
  • Commis (6 people in the kitchen plus two dishwashers)

Missions:

  • Supervise the smooth running of MEP (mise en place)
  • Ensure HACCP standards are followed
  • Place orders with the chef
  • Participate in the smooth running of service with the teams
  • Source local products for menu development
  • Support during MEP/Service
  • Minimize waste
  • Instill the spirit of the restaurant in local cooks
  • Manage a team in English

This position requires successful previous experience in high-end establishments (luxury hotels/gourmet restaurants – Michelin-starred houses) in France and ideally a first experience abroad.

Working Conditions:

  • Package includes airfare + visa fees + health insurance
  • 2 days off on Tuesday and Wednesday
  • Closed for 3 weeks in August

Salary:

  • If junior, 35,000 HK$ -> €4,100 net/month or 40,000 HK$ -> €4,700 net/month
  • Budget around 13,000 HK$ for accommodation -> accommodated in a hotel for the first two/three weeks
  • Permanent contract
  • Split shifts (average 10-12 hours/day)
  • Work visa
  • One-way economy class flight
  • Preferably single
  • Start date: as soon as possible
