HEAD PASTRY CHEFS (M/F) – USA

Our pastry shops, designed as local community stores, offer a wide range of artisanal products: pastries, viennoiseries, bread, brunches, combining tradition and modernity.
Your main responsibilities:
Under the supervision of the Executive Pastry Chef, your duties will include:
- Supervising and overseeing pastry production, managing a team of 6 people on a daily basis.
- Actively participating in pastry preparation.
- Ensuring the implementation and adherence to production guidelines.
- Maintaining smooth communication with different departments.
- Training, supporting, and motivating your team members daily.
- Coordinating the schedules in collaboration with the Executive Pastry Chef.
- Ensuring strict compliance with hygiene standards and HACCP procedures.
- Mastering and optimizing the use of production equipment to create high-quality pastries.
Candidate profile:
We are seeking someone who is passionate about pastry with solid experience in a similar role, and who enjoys working as part of a team. Your technical expertise and positive energy will be invaluable to our company.
Your strengths:
- A true passion for pastry, with infectious energy and motivation.
- Proven leadership and management skills with the ability to unite a team.
- Technical expertise in product creation, manufacturing processes, and mastery of equipment
- A commitment to quality production and attention to detail, while ensuring deadlines and hygiene standards are met.
Qualifications:
- Minimum 3 years of experience in pastry, including at least 1 year as a Head Pastry Chef or Production Manager.
- Strong knowledge of food hygiene standards.
- Ability to work in a fast-paced environment while ensuring consistent quality.
Ideal candidate profile:
You have experience working in high-volume pastry labs or bakeries, either day or night, gained at brands such as Paul, Eric Kayser, Boulangerie Ange, Louise, Sophie Lebreuilly, or similar. Experience in retail/lab settings is a plus, not necessarily in hospitality.
You are also comfortable with R&D projects, developing new products and improving existing processes.
