Job Description

Head Baker – Tourier – Paris

In this exceptional bakery, every day is an opportunity to create organic sourdough breads and pastries, as well as high-end catering products, distributed both in the boutique and to prestigious Parisian restaurants. Here, quality, attention to detail, and innovation are at the heart of every creation.
Your responsibilities:

Supervise and organize the entire bakery production: breads, pastries, sourdough starters.

Define and test unique recipes, ensuring quality and consistency with the establishment’s identity.

Manage and train your team to develop their skills and passion for the craft.

Oversee raw materials, stock management, and supplier relationships.

Ensure the excellence and consistency of products for the boutique, catering, and partner restaurants.

Strictly comply with hygiene and safety standards.

Propose innovations while valuing traditional know-how.
Bonus: mastery of laminated dough (tourage).
Candidate profile:

Proven experience in artisan and high-end bakery

Mastery of long fermentation and sourdough techniques

Expertise in traditional pastries and organic breadmaking

Natural leadership and passion for mentoring

Strong organizational skills, rigor, and ability to handle varying production volumes

Creativity, curiosity, and keen attention to detail
Conditions:

Salary: From €2,900/month, depending on experience and profile
