Job Description
RHEA Recruitment, a consultancy specialized in hospitality and catering recruitment, is currently seeking a:
Head Chef (M/F)
Location: Normandy Coast

Context
A 3-star hotel and traditional restaurant, taken over in December 2024, is entering a new phase of redevelopment.
The project aims to rebuild a strong culinary identity centered around authentic French bourgeois cuisine, honest and deeply rooted in Norman regional products.
The future Head Chef will play a key role in this transition — structuring the kitchen, leading the team, and actively contributing to the revival of the establishment.
The restaurant is currently in a relaunch phase, with a loyal clientele gradually returning and a clear ambition: to restore consistency, generosity, and coherence to its gastronomic offering.
The business is in a low season restart phase before the main high season (May to September).
Kitchen size: 150 m² – a well-equipped, high-potential workspace.
Main Responsibilities

Design and develop menus inspired by authentic, seasonal French bourgeois cuisine.

Ensure consistency between the culinary offering and the restaurant’s identity.

Source and promote local producers and artisans (farmers, fishermen, breeders, etc.).

Lead, train, and structure a young and evolving kitchen brigade.

Oversee daily operations: production, orders, inventory, and food cost control.

Collaborate with management to define margin and performance objectives.

Represent the restaurant’s culinary philosophy and values to guests and partners.
Restaurants such as Brass, Le Café des Ministères, La Fontaine de Mars, Le Relai Barbizon, and Henriette (Cabourg) reflect the culinary vision we aim to develop: traditional, sincere, and refined bourgeois cuisine.
Profile Sought

Experienced cook or sous-chef ready to step up to a first head chef position.

Strong knowledge of French gastronomy and quality products.

Ability to organize, structure, and motivate a team in a relaunch context.

Highly organized, rigorous, and reliable.

Passion for craftsmanship, patience, and a medium-term development mindset.

First-time head chef applicants welcome, provided there is genuine motivation and commitment to the project.
Position Details

Split shifts.

Accommodation provided (60 m² apartment) during the trial period.

Company utility vehicle available for professional travel.

Performance-based bonuses (food cost and turnover).

Profit-sharing bonus and prorated 13th month paid quarterly.

Salary: €2,600 to €3,000 net per month, depending on experience, plus bonuses.

Contract: Permanent (CDI) – split shift schedule.

Start date: December 2025 / January 2026.
