SENIOR SOUS CHEF or EXECUTIVE SOUS CHEF (M/F) – PARIS
We are looking for a passionate Senior Sous Chef or Executive Sous Chef for a prestigious gastronomic institution located in Paris. This restaurant is part of a dynamic group with several renowned establishments in the city, including a Michelin-starred venue.
The Establishment:

Cuisine type: Gastronomic (not starred but of high quality, aiming for excellence)

Service capacity: Around 200 covers per service, including regular events and banquets (up to 1,200 covers per week, 180–150 covers for dinner during peak periods, 110–40 for lunch in quieter times)

Kitchen team: 1 Head Chef, 1 Executive Sous Chef / Senior Sous Chef, 2 Junior Sous Chefs, Demi Chef de Partie and Commis Chefs – a total of about 20 people

Average Spend per Customer: €200
-
Schedule: Open 6 days a week, closed on Sundays

Kitchen: Large, spacious, and fully equipped (a rare find in Paris)
Your Role:

Lead and motivate a team of 15–20 kitchen staff

Work closely with the Head Chef as a duo to ensure quality and smooth service

Manage orders, food costs, and ensure high standards in all dishes served

Oversee the setup for special events and banquets

Monitor financial objectives and ensure cost control
Profile Sought:

Significant experience as a Sous Chef in a high-volume, high-standard environment

Passion for fine dining and a commitment to maintaining excellence

Strong leadership skills, ability to perform under pressure, and make quick decisions

Highly motivated to join a prestigious group with strong growth potential

Salary & Benefits:

Salary: €3,500 – €4,000 net per month + tips (€200–€250 per month)

Bonus: Based on financial performance and goal achievement (e.g., food cost ratios)

Performance Objectives: Related to raw material costs and overall profitability
