Night Production Manager – Pastry/Bakery (M/F)
📍 Greater Paris area
About the site
A modern 4,000 m² laboratory, recently redesigned to support strong growth, located just 5 minutes’ walk from the RER and soon to be served by the metro (within a year).
A large-scale production facility, handling a daily volume of 3,500 pieces/day (pastries & viennoiseries).
Main responsibilities
Reporting directly to the Head Pastry Chef, you will be responsible for the organization and management of the workshop during night shifts.

Supervise and coordinate production operations (safety, quality, costs, deadlines).

Manage a team of 15 people: motivation, training, skills development, and versatility.

Actively participate in production: baking, cooking, finishing.

Ensure compliance with quality standards, internal procedures, and HACCP regulations.

Contribute to continuous improvement of processes and organization.

Ensure proper maintenance of workstations and equipment.
Work organization

Hours: 10 pm – 6 am (9 pm on weekdays, 8 pm on Friday & Saturday)

Days off: Saturday & Sunday

Production volume: pastry & viennoiserie – 3,500 pieces/day
Profile required
-
Proven experience in managing a production team (ideally in pastry/bakery in prestigious houses such as Lenôtre, Ladurée, etc.)

Strong technical skills in night production

Leadership, rigor, and organizational skills

Passion for high standards and refined environments
