RHEA Recrutement, a recruitment agency specialized in the upscale restaurant industry, is looking for a growing Italian restaurant group based in Paris:
🎯 EXECUTIVE CHEF (M/F) – 3 Restaurants
🍝 About the Group
This fast-growing family-owned group brings together two complementary Italian restaurant concepts, united by a shared passion for generous, authentic Italian cuisine made exclusively with high-quality, 100% Italian products.
From crispy Roman-style pizzas and house-made pasta fresca to flavorful antipasti and comforting trattoria dishes, each location embodies a warm, sincere vision of Italy.
In late 2025, a third premium location will open — a high-end, elegant and creative dining experience designed to showcase the group’s culinary expertise and act as its flagship venue.
👨🍳 Your Responsibilities as Executive Chef:
Culinary Creation & Quality:

Define the culinary identity of each venue and develop a refined, creative, and cohesive menu.

Create detailed recipe sheets for each dish, ensuring consistency, profitability, and precision.

Oversee dish execution and ensure presentation and quality standards are consistently met.
Team Management:

Recruit, lead, and unify kitchen teams across multiple locations.

Provide continuous training on techniques, recipes, and the group’s standards.

Foster a motivating, professional, and supportive team environment.
Operations & Organization:

Develop weekly schedules aligned with business volume and revenue goals.

Ensure strict compliance with HACCP and food safety regulations.

Optimize kitchen workflow, productivity, and operational tools.
Financial Management:

Oversee purchasing, inventory, and supplier relations.

Monitor food cost ratios and adjust offerings to meet economic targets.

Work closely with the executive team to evolve the menu based on seasonality, trends, and performance.
🧾 Profile Sought:

Proven experience as an Executive Chef or Multi-site Head Chef.

Strong leadership, organizational skills, and a collaborative spirit.

High standards, attention to detail, and a deep passion for quality products.

Knowledge of traditional and modern Italian cuisine is a significant asset.
