Job Description
RHEA, a recruitment agency specialized in the Hospitality and Restaurant industries, is currently looking to fill the position of Pastry Chef (M/F) for a renowned establishment located in the Bordeaux region, South West of France.
Job Description:
- Position: Pastry Chef (M/F)
- Location: Bordeaux Region, South West France
Description: We are in search of a skilled Pastry Chef for a hotel comprising 8 rooms and 4 suites, along with a restaurant ideally situated in the South West region. The establishment holds a Michelin star, offers 35 seating places, and is closed on Saturday, Sunday, and Monday for lunch.
The owning group has an excellent reputation, and the proprietors are enthusiasts of locally sourced products. The establishment benefits from its own market garden, an on-site mushroom farm, and a vineyard property.
Responsibilities:
- Develop the sweet section in collaboration with the Executive Chef.
- Oversee the preparation of service.
- Create basic recipes (creams, various doughs, sauces, coulis, etc.).
- Design classic desserts, as well as more elaborate creations and entremets.
- Ensure strict adherence to hygiene and food safety rules.
- Conduct team training (2 assistants) and manage schedules.
- Control the quality of dishes.
- Ensure compliance with hygiene rules, HACCP protocol, and internal regulations.
- Uphold and enforce safety rules, and liaise accordingly.
- Adhere to the establishment’s standards.
- Adapt creative pastry offerings based on evolving customer preferences, ensuring continuity in terms of quality and presentation.
Profile:
- Effective in helping team members progress.
- Strong affinity for high-level pastry.
Conditions:
- Position available ASAP.
- Salary: €3500-€4000 gross/month, depending on profile.
- Lodging provided initially in shared accommodation.
- 7 weeks of paid leave per year, including two recovery weeks from December 15th to January 15th, one week at Easter, and two weeks at the end of August.
