Position: Establishment Director (M/F) – Paris

We are looking for an Establishment Director capable of uniting teams and achieving revenue goals while preserving the values and identity of the establishment.

In collaboration with the Head Chef, you will co-manage ADN, a neo-fooding restaurant with a team of 15 people, including an assistant manager and a bar manager.

The restaurant (80 seats) operates five days a week, exclusively in the evenings, from Tuesday to Saturday, 7 PM to 2 AM.

Your Role:

✅ Operational Management: Supervise teams and oversee daily operations
✅ Team Leadership: Foster a motivating and cohesive work environment
✅ Financial Performance: Drive profitability and performance
✅ Brand Identity: Uphold and showcase our core values across gastronomy, design, fashion, and events

Profile Sought:

✔️ Minimum 3 years of experience in a similar position
✔️ Strong affinity with gastronomy, design, fashion, and event industries
✔️ Experience in a Michelin-recognized establishment would be a major asset
✔️ Ability to oversee the restaurant’s transition to a nightlife concept (in collaboration with a designer endorsed by Balenciaga, for the launch of a festive mixology bar & club in 2025)

New Concept – 2025 Update:

Starting fall 2025, the restaurant will undergo a nightlife transformation from Thursday to Saturday, with the opening of a festive mixology bar & club (7 PM – 2 AM).

Conditions:

📅 Start date: ASAP
💰 Fixed salary: €3,000 net/month
📈 Performance-based bonus: ~€400 net/month (depending on revenue)
💵 Tips: ~€400 net/month
🚀 Days off: Sunday & Monday
🌙 Evening shifts only
