Job Description

RHEA Recruitment, a recruitment agency specialized in high-end hospitality and gastronomy, is seeking for a prestigious Parisian establishment:

SOUS-CHEF (M/F) – PARIS

This private mansion-style boutique hotel with 40 rooms offers in its restaurant a refined and contemporary cuisine, crafted from fresh, seasonal ingredients, within an elegant and convivial atmosphere. You will join a dynamic and well-structured brigade, within a demanding yet supportive organization.


Main Responsibilities

Reporting to the Group Executive Chef, you will actively contribute to the daily management and smooth running of the kitchen. Your main duties include:

  • Assisting the Executive Chef in supervising daily culinary production.

  • Participating in the creation and implementation of menus and à la carte dishes.

  • Ensuring consistency and quality in the execution of all dishes.

  • Organizing and managing a brigade of 22 cooks and 8 kitchen porters.

  • Training, motivating, and developing the team to maintain a high level of performance.

  • Monitoring inventory, managing orders, and maintaining supplier relationships.

  • Ensuring full compliance with HACCP hygiene and food safety standards.

  • Contributing to cost control and adherence to the department’s budget.

  • Promoting smooth communication between the kitchen, dining room, and management teams.


Profile

  • Proven experience of at least 3 years as a Sous-Chef or in a similar role.

  • Strong technical skills, attention to detail, and high level of rigor.

  • Ability to manage and motivate a large team in a high-volume environment.

  • Good knowledge of cooking techniques, products, and culinary trends.

  • Team spirit, leadership, and ability to perform well under pressure.

  • Degree in hospitality or culinary arts preferred.

  • Previous experience in an upscale brasserie or high-volume restaurant is a plus.

  • Full understanding of HACCP regulations required.


Conditions

  • Status: Managerial position – 218 days per year (Level 5, Step 1).

  • Salary: €3,925 gross/month + meal allowance + seniority bonus starting after 2 years (€200 after 2 years, €300 after 3 years, up to €500 per year).

  • Flexible working hours and days off depending on activity.
