Job Description
RHEA Recrutement, a recruitment firm specialized in high-end hospitality and gastronomy, is looking for one of its clients — a Michelin-starred gastronomic restaurant located in Provence:
Sous-Chef (M/F) – Michelin-Starred Restaurant – Provence
As Sous-Chef, you will assist the Head Chef in the operational management of an exceptional restaurant. You will be actively involved in mise en place, service, and the creation of new dishes, while upholding the standards of excellence expected in a Michelin-starred establishment.
Main Responsibilities
Mise en Place & Service

Supervise mise en place for breakfast and the All Day Dining menu

Ensure smooth service operations and maintain established quality standards

Take part in pre- and post-service briefings
Creativity & Innovation

Collaborate with the Head Chef and Pastry Chef on the development of new recipes

Participate in tastings and testing phases
Purchasing & Stock Management

Manage orders, deliveries, and inventory control

Optimize costs through ratio monitoring and technical sheets
Team Management & Leadership

Lead, motivate, and support the kitchen team

Foster a work environment focused on high standards and continuous improvement
Hygiene & Organization

Ensure strict compliance with HACCP food safety regulations
-
Maintain a clean, organized, and efficient workspace
Candidate Profile
-
Proven experience in a gastronomic or Michelin-starred restaurant
-
Minimum of 3 years in the kitchen, including at least 2 years as a confirmed Chef de Partie or Sous-Chef

Strong command of haute cuisine techniques
-
Natural leadership, team spirit, and strong organizational skills

Cost control knowledge and operational efficiency

Fluent French required; English is a plus
Conditions

Permanent contract (CDI)

Salary: €3,500 – €4,400 gross/month

Annual closure: January to mid-February (approx. 1.5 months per year)
