Job Description

RHEA Recrutement, a recruitment firm specialized in the high-end hospitality and restaurant industry, is seeking on behalf of one of its Paris-based clients a:

Sous-Chef de Cuisine (M/F) – Permanent Contract – 4-Star Hotel in Paris

This recently renovated 4-star hotel offers a modern and elegant culinary concept. The establishment opened in 2023 and is located in Paris.

Key Responsibilities

1. Operational Management:

  • Prepare, finalize, and ensure proper service of dishes during meal times

  • Manage stock levels within your section and communicate needs to the Head Chef

  • Contribute ideas for menu development in line with the restaurant’s concept

  • Apply and ensure compliance with technical recipes

  • Organize mise en place and oversee smooth service operations

  • Participate in new dish testing and promotional campaigns

  • Ensure compliance with storage procedures and product freshness

2. Hygiene & Safety:

  • Strictly follow HACCP procedures and hygiene regulations

  • Take part in cleaning schedules and internal inspections

  • Maintain a clean, safe, and well-organized working environment

3. Team Management (12 staff members):

  • Plan and coordinate the brigade’s daily activities

  • Work closely with other departments (service, management, etc.)

  • Support the continuous training and development of team members

  • Maintain order and organization in storage areas

Candidate Profile

  • CAP / BEP Cuisine diploma required

  • Proven experience in a similar role (experience in a high-end hotel or restaurant is a plus)

  • Strong sense of responsibility, attention to detail, and organizational skills

  • Solid knowledge of hygiene regulations

  • Fluent in French

  • Team-oriented and proactive mindset

Job Details

  • Start date: June 1st

  • Gross monthly salary: €3,925

  • Full-time permanent contract – Executive status (218 working days per year)

  • 100% reimbursement of public transport pass (Passe Navigo)

  • Two staff meals per working day

  • One €10 meal voucher per day
