Chef de Cuisine (M/F) – Parisian institution at the heart of the Golden Triangle

Concept: A high-end brasserie that embodies timeless elegance and the gastronomic heritage that has defined this restaurant on the Parisian culinary scene for decades. A blend of modern and classic, working with fresh products and small local producers.

Open 7 days a week for lunch and dinner, with 150 seats indoors and 50 seats outdoors.
Average ticket price:

  • Lunch: €65
  • Dinner: €90

Main Responsibilities:

  • Collaborating with the founders on menu creation: breakfast, lunch, reduced afternoon menu, and dinner.
  • Managing a kitchen team of 12 to 15 members, including existing staff and taking part in recruitment (overseeing current employees, collaborating on recruitment strategies, departures, and monitoring payroll).
  • Managing services for 160 seats, with forecasts of 120 to 180 covers for lunch and 150 for dinner.
  • Managing supplier relationships and sourcing quality products.
  • Creating technical sheets and optimizing food costs.

Profile Sought: We are looking for a dynamic and ambitious Chef de Cuisine, ready to take on a unique challenge: to build and manage a team, design creative menus from scratch, and revive a prestigious institution.

Specific Missions:

  • Oversee the preparation process according to expected occupancy and consumption.
  • Ensure the quality of dishes: presentation, temperature, and service timing.
  • Coordinate between the kitchen and the dining room.
  • Motivate and lead the team, ensuring their well-being and working conditions.
  • Provide continuous training for the team.
  • Participate in administrative and operational management alongside the management team.

Required Qualifications:

  • Significant experience in high-end brasserie-type restaurants.
  • Proven experience as a Chef de Cuisine or Executive Chef.
  • Sensitivity to culinary trends, especially in French cuisine.
  • Creativity and meticulousness in managing the culinary offering.

Conditions:

  • Salary: between €5,000 and €5,500 net per month (around €83,000 annually).
  • Potential bonus after 6 months, negotiable depending on the profile.
  • Executive status.
  • Start date: January 2, 2025.
  • Working hours: possibility of split shifts.
