Job Description

RHEA Recruitment, a high-end hospitality and restaurant recruitment agency, is looking for a:

Head Chef (M/F) Location: La Clusaz (a ski resort located in the French Alps)

Roles / Fixed-term contract or Permanent contract Periods: from May 1st to May 13th // from June 11th to September 2nd or September 30th, or in a permanent position since June 11th.

The establishment is closed for 4 months per year, everything is homemade, and the owner is the sommelier. It’s a beautiful establishment with a lovely terrace that accommodates 40 covers indoors and 60 on the terrace in a cozy setting.

In winter, the attendance is much higher (140 covers).

The average spend per person is 45-50 euros for lunch and dinner. Starters range from 10 to 16 euros, main courses range from 16 euros for a pasta dish to 48 euros for a carpaccio of veal head or kidneys. The beef rib is offered at 48 euros.

As a Head Chef, you will be responsible for preparing and presenting dishes, in collaboration with a commis chef and a dishwasher, and the owner of the establishment in summer, and 5 staff members in winter. You are proactive, and French cuisine is one of your specialties as you participate in developing the restaurant’s menu.

Responsibilities:

  • Plan and develop the menu in collaboration with the management team
  • Supervise and coordinate kitchen activities
  • Prepare dishes while adhering to quality and hygiene standards
  • Develop technical sheets for proposed dishes
  • Manage inventory and place orders with suppliers while establishing ratios
  • Ensure timely service

Required Skills:

  • Previous experience as a Head Chef or in a similar position
  • Diploma in catering and HACCP certification required
  • Strong organizational skills, attention to detail, and cleanliness in the workplace and kitchen
  • Good communication and ability to work in a team

Conditions:

  • Accommodation and meals provided in a fully equipped studio
  • Salary: 20 NET per hour for the mission from May 1st to May 13th
  • Salary in fixed-term or permanent contract: 4000 – 4500 gross/month
