MULTI-UNIT – PARIS


About the Group

This dynamic and independent Paris-based restaurant group is expanding and currently operates five distinct venues, each with its own culinary identity:

  • A high-volume flagship restaurant in the 1st arrondissement (around 300 covers/day), offering a creative blend of BBQ and vegetarian cuisine.

  • A seasonal pop-up location in the 14th arrondissement, serving traditional French cuisine in a relaxed setting (around 150 covers/day).

  • Three additional restaurants united under the same brand concept (total of 300 seats), focused on gourmet burgers, fresh salads, and vegetarian dishes.

The group employs approximately 50 kitchen staff, distributed across all sites.


Role & Responsibilities

As Executive Chef, you will oversee all kitchen operations across the five venues. This is a highly strategic and hands-on role requiring both culinary vision and strong operational leadership.

Culinary Development & Innovation

  • Design and update menus 2–3 times per year in line with each venue’s identity

  • Create standardized technical recipes and prep sheets

  • Stay ahead of culinary trends and source quality ingredients

Team Management & Leadership

  • Supervise kitchen teams across all locations

  • Recruit and train new staff

  • Coach and evaluate head chefs’ performance

Operational Oversight & Cost Control

  • Monitor food cost, stock levels, and kitchen margins

  • Select and negotiate with suppliers

  • Ensure strict application of HACCP and food safety regulations

  • Implement and maintain internal kitchen procedures and systems

Strong Field Presence

  • Regular weekly site visits

  • Support teams during key service hours

  • Be ready to step in when needed (peak periods, absences, etc.)


Profile Sought

  • Proven experience as an Executive Chef or multi-site Head Chef

  • Strong leadership and team coordination skills (with large kitchen teams)

  • Mastery of various culinary styles: vegetarian, BBQ, French, street-food

  • Ability to alternate between strategy and operational execution

  • Excellent knowledge of hygiene protocols, production organization, and standardization

  • Natural leadership, hands-on approach, strong organizational mindset

  • Self-employed status preferred (freelance/independent contractor)


Conditions & Compensation

  • Freelance / self-employed contract preferred

  • Estimated salary: around €6,000 net/month, to be discussed based on experience and working arrangement

  • Role spans all five Paris-based locations

  • Full-time availability required

  • Start date: September
