RHEA Recrutement, a recruitment agency specialized in the hospitality and restaurant industry, is seeking an experienced Restaurant Manager (M/F) to lead the front-of-house operations of a renowned bistronomic restaurant, open Tuesday through Saturday and located in the heart of Paris.

As the true conductor of the dining room, you will be responsible for the quality of guest reception, smooth service operations, team performance, and overall guest satisfaction.

Main Responsibilities:

Team Management: Lead and supervise the dining room team, manage schedules, handle recruitment, onboarding, and continuous training.
Service Excellence: Oversee daily service in two distinct dining areas, implement and uphold service standards, and coordinate with the sommelier team.
Guest Experience: Be actively present during service, manage guest feedback, and act as the ambassador of the restaurant’s philosophy.
Cross-functional Coordination: Work closely with kitchen, pastry, reservations, communication, HR, and accounting departments.
Performance Monitoring: Analyze sales, manage inventory and equipment, supervise billing, and participate in budgeting and P&L reviews.
Organization & Compliance: Ensure daily closing procedures are followed, maintain equipment and furniture, and uphold hygiene and internal standards.

Profile Sought:

Proven experience as a dining room manager or assistant manager in a bistronomic or gastronomic restaurant.
Strong leadership, impeccable sense of service, and ability to motivate and develop a team.
Attention to detail, client-oriented, driven by excellence and organizational rigor.
Good knowledge of the Parisian hospitality market.
Fluent in French and English; comfortable with digital tools and systems.
Autonomy, pedagogy, charisma, and high adaptability.

Conditions:

Permanent contract (CDI) – Executive status
Gross monthly salary: €4,000 to €4,800 depending on experience, reviewable after the trial period
Performance-based bonus
Days off: Sunday and Monday
