Job Description

RHEA Recruitment, a high-end hospitality and restaurant recruitment agency, is currently seeking a:

Director of Restaurants & Bars (M/F)

Experience in Michelin-starred establishments is essential.

Working closely with the Head Sommelier, the MDH of the Michelin-starred restaurant, the Brasserie Events Manager for front-of-house operations, the Executive Chef for kitchen operations, and the General Manager, you will be responsible for the qualitative development of the establishment, with a significant role in team support and management.

DNA/ENVIRONMENT

  • 20 Rooms and Suites, a 60-seat Michelin-starred restaurant open 5/7 days, a high-end brasserie restaurant opening 7/7 with 100 seats, a Bar/Lounge, and a tasting cellar.

Team Management (approx. 25 people) Your future missions: • Ensure the successful management and results of the various outlets. • Responsible for managing, controlling orders, stocks, schedules, margin calculation and compliance, quality standards, hygiene, and safety. • Ensure customer satisfaction and adherence to site standards. • Ensure quality, service efficiency, site e-reputation, and group procedure compliance. • Contribute to site commercial development, create commercial partnerships, manage events, group reception with your GM, etc. • Participate in recruitment, training, and mission organization.

Skills and qualities we are looking for:

• Proficient in profit center management and activity tracking tools. • A born leader, with a taste for challenges and problem-solving skills. • Experience in team management, a savvy manager who masters performance indicators. • Mastery of the rules and codes of service in a gastronomic or Michelin-starred environment. • 5+ years of experience in restaurant management or a similar supervisory role. • Dynamic, enthusiastic, and passionate about customer service. • Charismatic with strong managerial qualities. • Solution-oriented, able to take measured initiatives, and hands-on. • Analytically minded, capable of self-reflection to progress and unite teams in a culture of excellence and continuous improvement.

Additional information: Work schedule: Split shifts Remuneration: €3500-3800 gross/month depending on profile Rest days: Two days off Housing assistance available initially until you find your own accommodation.

Position available from April 2024.
