Job Description
RHEA Recruitment, a high-end hospitality and restaurant recruitment agency, is looking for a:
Director of Restaurants & Bars (M/F)
Essential Experience in Michelin-starred establishments.
In close collaboration with the Head Sommelier, the MDH of the Michelin-starred restaurant, the Event Brasserie Manager for the front-of-house aspect, the Executive Chef for the kitchen aspect, and your General Manager, your objective will be the qualitative development of the establishment. This includes a crucial role in team support and management.
DNA/ ENVIRONMENT:
20 Rooms and Suites, a gastronomic restaurant with 60 seats open 5/7 days a week with 1 Michelin star, a high-end brasserie-style restaurant opening 7/7 days a week with 100 seats, a Bar/Lounge, and a tasting cellar.
Team Management (Approximately 25 people)
Your Future Missions:
You will be responsible for the proper management and results of the various points of sale.
Handling the management, control of orders, stocks, schedules, margin calculation, and compliance with quality, hygiene, and safety standards.
Ensuring customer satisfaction and adherence to site standards.
Guaranteeing the quality, efficiency of service, e-reputation of the site, and adherence to group procedures.
Overseeing the commercial development of the site, creating commercial partnerships, event management, group reception with your General Manager.
Participating in recruitment, training, and mission organization.
Skills and Qualities We Seek:
Proficiency in profit center management and activity tracking tools.
Innate leader with a taste for challenges and problem-solving skills.
Experience in team leadership, a savvy manager familiar with performance indicators.
Mastery of rules and codes of service in a gastronomic or Michelin-starred setting.
5 years or more of experience in a similar supervisory role in the restaurant industry.
Dynamic, enthusiastic, passionate about customer service.
Charismatic with excellent managerial qualities for success in your missions.
Solution-oriented, capable of measured initiatives, hands-on individual.
Finely analytical, capable of self-reflection for progress, rallying teams in a dynamic of excellence and continuous improvement.
Required Qualities:
Excellent interpersonal skills, rigor, and organization.
Excellent presentation.
Additional Information:
Work Schedule: Split shifts
Compensation: €3200-3800 net/month depending on profile
Days off: Two days off
Housing assistance at the beginning until you find your own accommodation
