We are recruiting for one of our clients a dynamic and experienced General Manager to lead a high-end Mediterranean rooftop restaurant offering panoramic views and a seating capacity of 200 covers. The restaurant is renowned for its elegant design, refined Mediterranean cuisine, and outstanding service.
Job Overview:
As the General Manager, you will be responsible for overseeing the full operational management of the restaurant, ensuring an unforgettable guest experience while leading a high-performing team. You will maintain service excellence, the profitability of the establishment, and guarantee impeccable guest service, whether dining in the main restaurant or attending special events.
Key Responsibilities:
🌟 Leadership & Team Management:
- Lead and inspire a large team, ensuring operational efficiency and high standards of service across all areas.
- Oversee recruitment, training, and staff development to align team members with the restaurant’s values and service standards.
- Foster a motivating and professional work environment focused on responsibility and excellence.
🌟 Guest Experience:
- Ensure every guest enjoys a high-quality, personalized, and memorable dining experience.
- Proactively engage with guests, handle feedback, and resolve issues quickly to maintain a high level of guest satisfaction.
- Implement systems to streamline service delivery, ensuring the restaurant consistently exceeds guest expectations, especially during peak times.
🌟 Operational Management:
- Oversee the restaurant’s daily operations, managing the flow of service for 200 covers during peak hours.
- Implement strategies to effectively manage high-capacity operations, ensuring seamless coordination between front-of-house, kitchen, and bar.
- Maintain cleanliness, organization, and high presentation standards throughout the restaurant.
- Manage inventory, ordering, and cost control to ensure smooth operational flow and budget adherence.
🌟 Financial Management:
- Develop and manage budgets and financial plans, ensuring profitability while maintaining high quality.
- Control labor costs, food & beverage expenses, and other operational costs to meet or exceed financial targets.
- Analyze operational performance, identify areas for improvement, and implement strategies to optimize service, reduce costs, and increase revenue.
🌟 Event & Special Function Management:
- Oversee the planning and execution of private events, large functions, and VIP guest experiences, ensuring top-tier service and organization.
- Coordinate with the events team to seamlessly manage large bookings and special occasions (corporate events, private parties, etc.).
- Ensure large-scale events are well-organized, with trained staff prepared to handle the increased volume of guests.
🌟 Collaboration with Culinary & Beverage Teams:
- Work closely with the Executive Chef and culinary team to ensure the Mediterranean menu is consistently executed with quality and creativity.
- Collaborate with the beverage team to create and refine drink offerings that complement the Mediterranean menu.
- Ensure efficient communication between kitchen, bar, and service teams to guarantee smooth service, especially during peak times.
Qualifications & Requirements:
- Minimum of 5 years of experience as a General Manager or in senior management within a large-capacity, high-end restaurant or hospitality environment, with experience managing over 100 covers at a time.
- Proven track record of managing large teams in high-volume settings, maintaining service excellence while managing a 200-cover restaurant.
- Strong leadership and people management skills, with the ability to navigate the complexities of running a high-capacity venue while ensuring a positive team culture.
- Experience in event management, including managing large functions and private events.
- In-depth knowledge of Mediterranean cuisine and the ability to manage both casual and upscale dining experiences.
- Strong financial acumen, with experience in budgeting, cost control, and maximizing revenue in a high-volume environment.
- Excellent communication, organizational, and problem-solving skills, with the ability to multitask and remain composed in a fast-paced, high-pressure environment.
- Availability to work evenings, weekends, and holidays, especially during peak service times.
