Job Description
RHEA Recruitment, a premium recruitment agency specializing in hospitality and fine dining, is seeking an Executive Chef “Administrative” (M/F) for a position in Paris.
Group DNA: Over twenty restaurants in 7 countries, ranging from fine dining to street food.
This Executive Chef role will primarily focus on all establishments located in France (70-80%) and internationally, owned, managed, or consulted by the group. The Executive Chef will oversee and mentor the chefs at these establishments, with direct reporting from the on-site teams.
The ideal candidate will be responsible for supporting the Chefs de Cuisine across various establishments, focusing on procedure compliance, recruitment, team training, and quality control. Key responsibilities include:
Responsibilities:
- Lead and support restaurant chefs.
- Oversee hygiene processes and ensure compliance with cleanliness and kitchen quality standards.
- Manage food costs, create and monitor recipe sheets.
- Actively participate in recruiting kitchen staff and contribute to key HR decisions.
- Train and mentor chefs and sous-chefs, helping them develop their administrative skills.
- Monitor financial and operational performance indicators related to F&B activities.
- Contribute to the design and opening of new culinary establishments.
- Plan and organize pre-opening and opening phases of new restaurants with close operational follow-up.
- Work closely with the creative chef, operations director, and executive management to ensure optimal coordination.
- Manage product sourcing and select suppliers in line with the group’s vision.
- Participate in key F&B decision-making for the group and its establishments.
- Ensure the quality of dishes from preparation to final presentation.
- Negotiate group purchasing contracts in collaboration with the cost control department.
- Handle complaints or issues that arise.
- Carry out administrative tasks related to the management of the culinary department.
Profile Sought:
- Proven experience as a Head Chef/Executive Chef, with team leadership responsibilities.
- Culinary training and HACCP certification.
- Strong administrative skills in managing a culinary division.
- Expertise in cost management and the ability to negotiate with suppliers.
- Experience in mentoring young, dynamic teams.
- Excellent teaching skills, teamwork, and strategic vision for the F&B division.
- Positive, motivated, and proactive attitude.
- Fluency in French and English, both spoken and written.
- Strong command of Excel, Word, and email tools.
This position offers a unique opportunity to actively contribute to the development and success of this innovative and growing group.
Conditions:
- Position based in Paris.
- Salary: €60-65K gross/year to start (depending on profile).
- Status: Senior Executive (highest level); eligible for 9-11 additional paid vacation days on top of regular leave, not eligible for overtime.
- 4-month trial period, renewable.
- Start date: ASAP.
