Job Description

RHEA, a recruitment agency specializing in the Hospitality and Catering sectors, is currently seeking a:

Position: Maître d’Hôtel or Restaurant Manager (M/F)

Michelin-starred restaurant since 2021, located just 15 minutes from Paris, open Tuesday, Wednesday, Friday, and Saturday from 12:00 to 14:30 and from 19:00 to 21:30 (until 22:00 on Saturdays), and on Thursday from 19:00 to 21:30 only. Closed on Sunday, Monday, and Thursday lunch.

Team: 3 people in the dining room: a manager, a demi-chef de rang trained at Ducasse, and a sommelier.

Service: An average of 10-20 covers for lunch and 18-30 covers for dinner (average of 45 covers per day).

Average ticket: €80 for lunch and €180 for dinner.

Key Responsibilities:

Orchestrating the dining room and reservations:

  • Manage reservations and seating arrangements with precision.
  • Ensure an exceptional customer experience from the first contact.

Team Leadership:

  • Inspire and train your team to maintain service standards befitting a Michelin-starred restaurant.
  • Organize schedules and optimize human resources.

Customer Relations:

  • Create memorable experiences for your guests, ensuring their loyalty through impeccable service.
  • Handle delicate situations with professionalism.

Kitchen-Dining Room Coordination:

  • Work closely with the Chef to synchronize the pace of service.
  • Participate in menu development and tasting organization.

Administrative Management and Development:

  • Oversee orders, stock management, and daily financial operations.
  • Contribute to the establishment’s growth by recruiting and training new talents.
  • Assist in organizing special events.

Commitment to Quality:

  • Implement and enforce hygiene and safety standards.
  • Provide wine expertise to enhance the customer experience.

Your Profile:

You are an experienced professional in the hospitality/restaurant industry, with a passion for excellence and proven expertise in dining room management. Your charisma and service orientation enable you to create a warm atmosphere while maintaining high standards. You are fluent in English and have a strong knowledge of wines.

Conditions:

  • Start Date: 07/01/2025 (to be confirmed)
  • Contract Type: Permanent (CDI)
  • Working Hours: 42 hours/week
  • Salary: €2,600 net/month
